Egg in a Nest

- One thick Slice of Bread, preferably from a whole artesian type loaf
- One large organic pastured, free-range egg
- Olive oil
- Salt and pepper to taste
- Salsa or topping of choice. Often this is served with roasted red peppers on top.
My version has a cannellini bean salsa that I had made the day before and I thought it would be delicious with this. Fresh tomato, avocado, and basil works nicely too. Don't forget a nice little drizzle of olive oil to finish!

- Heat olive oil slightly in a fry pan
- Pull away the doughy middle part of the bread and pan fry on each side slightly
- Crack the egg in the center of the bread and cook, flipping once (or not, for sunny side up) to the desired doneness
- Finish with your choice of topping
