Since I always eat a hearty breakfast, I sometimes forget to even think about lunch. This super healthy and easy to prepare open faced sandwich hits the spot. Good quality protein, healthy fats and complex carbohydrates keeps your blood sugar low, slow and steady. It's also yummy!!

- Two Hard Boiled Eggs
- 1 avocado
- Approx 2 oz goat cheese
- Olive oil for drizzling
- Himalayan salt and fresh cracked pepper
- Two Tbs of capers

- Lightly toast the bread slices
- Spread with goat cheese
- Top with smashed avocado
- Top avocado with hard boiled egg slices
- Drizzle with olive oil
- Sprinkle with capers
