I first became aware of Chef Floyd Cardoz in the early 2000’s while attending culinary school in NYC. Some friends invited me to his restaurant Tabla and it was a marvel. Sadly, after 12 years Table closed it’s doors, but Chef Cordoz has not been resting on his laurels. Dubbed “Spicy Man” and” King of Spice” by his colleagues, his creations are heavily influenced by his native Indian cooking but with a modern, fresh take. Incidentally, he is not unlike the protagonist in the delightful film “The Hundred Foot Journey”. Some of my favorites in Flavorwalla happen to be on the healthier side; Brussels Sprouts Hash, Spiced Chicken Soup with Chickpea Noodles and Roasted Beets with Orange and Fresh Ricotta. He even has a recipe for dog food that he designed for his beloved puppy Shadow. I hope you enjoy this cookbook as much as I do!
